Recipe: dou beef-smash scallion pancake
aka the boy dinner that actually goes to therapy.
ingredients (1 serving)
1 frozen scallion pancake (i-mei 蔥抓餅, the jegejay chou one)
3–4 oz ground beef
pinch salt
pinch white pepper
1 tbsp dou sriracha
1–2 tsp dou snack oil
optional: microgreens
instructions
1. keep the pancake frozen
don’t thaw it. trust the process.
2. smash the beef
place pancake flat in a dry pan over medium heat.
season beef with salt + white pepper, then smash the beef directly onto the frozen pancake so it adheres like a situationship you didn’t consent to.
3. crisp the pancake side
cook 1–2 min until the bottom turns golden and flaky.
4. flip
flip so the beef hits the pan. cook until browned and slightly frizzled at the edges.
(the beef fat will hydrate the pancake in a deranged but tasty way.)
5. rest
remove from pan. let it chill 1 min so it doesn’t leak emotions.
6. finish
spoon on the official dou snack oil + sriracha
scatter microgreens. add sesame if you’re performing self-care.
7. eat
fold like a quesadilla. burn your mouth. feel alive.
serve with
extra snack oil drizzle (the shine is non-negotiable)
